From mountain peaks to valley lows, the leafy chayote trusses look like giant green carpets

Residents can harvest several tons of fruit from a large truss of chayote every year but they are relatively cheap at just VND5,000 per kg. This garden also supplies chayote seeds for the northern region. 

The shoots and tendrils of the chayote taste sweet and nutty and are a specialty of Sapa.

 
Chayote are sold at Sapa market by the Mong and Dao ethnic people.
